Instructions

Instructions

  1. Prep the pork. Pat tenderloin dry. Trim any silver skin—it won’t render and gets chewy.

  2. Season. Mix paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub olive oil all over the pork, then coat with the spice mixture.

  3. Preheat. Preheat air fryer to 200°C (400°F) for 3-5 minutes.

  4. Cook. Place tenderloin in the air fryer basket. Cook for 18-22 minutes, flipping halfway through, until internal temperature reaches 63°C (145°F).

  5. Rest. Let rest for 5 minutes before slicing—the temperature will rise a few more degrees and juices will redistribute.

  6. Slice and serve. Cut into 1cm (½ inch) medallions.

Temperature Guide

  • 63°C (145°F) — Slightly pink centre, very juicy (recommended)
  • 68°C (155°F) — No pink, still moist
  • 71°C (160°F) — Well done, can be dry

Variations

  • Herb crust: Add dried rosemary and sage
  • Spicy: Add cayenne and chili powder
  • Asian: Use five-spice powder, ginger, and sesame oil
  • Mustard crusted: Coat with Dijon before the spices

Notes

  • Tenderloin is very lean—don’t overcook
  • Works with two smaller tenderloins too
  • Let it come to room temperature before cooking for more even results
