  1. Preheat oven. Set to 200°C (400°F). Line a baking sheet with parchment paper.

  2. Prep salmon. Pat fillets dry. Place skin-side down on the baking sheet.

  3. Season. Drizzle with olive oil. Season with salt, pepper, and garlic. Press fresh dill onto the top of each fillet. Arrange lemon slices on top.

  4. Bake. Cook for 12-15 minutes until salmon flakes easily with a fork. The centre should still be slightly translucent.

  5. Serve. Serve with a squeeze of fresh lemon.

Perfect Doneness

Salmon is done when:

  • It flakes easily with a fork
  • Internal temp is 52-57°C (125-135°F)
  • The flesh turns from translucent to opaque
  • A bit of white albumin appears (normal, not a problem)
