Preheat oven to 200°C (400°F). Line a baking tray with parchment paper or a silicone mat.

Grate the cheese. Use a coarse grater for best results. Finely grated cheese melts too quickly.

Form rounds. Place tablespoon-sized mounds of cheese on the tray, spaced 5cm (2 inches) apart. Flatten slightly with the back of a spoon.

Add toppings. If using, sprinkle seasonings over each round now.

Bake. Cook for 6-8 minutes until edges are golden brown and centres have stopped bubbling.

Cool completely. Cheese crisps will be soft when hot but crisp up as they cool. Wait at least 5 minutes before handling.

- Cheese choice matters: Aged, hard cheeses work best. Avoid soft or high-moisture cheeses.
- Watch carefully: These go from perfect to burnt quickly. Check at 6 minutes.
