Garlic Butter Salmon

Prep the salmon. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.

Sear the salmon. Heat olive oil in a skillet over medium-high heat. Place salmon skin-side up and cook for 4 minutes until golden crust forms.

Flip and add butter. Flip salmon to skin-side down. Add butter and garlic to the pan. Cook for 3-4 minutes, spooning the melting butter over the fish.

Finish with lemon. Remove from heat. Add lemon juice to the pan and swirl. The residual heat will create the sauce.

Serve. Plate salmon and spoon garlic butter sauce over the top. Garnish with fresh parsley.
Tips
- Skin-on vs skinless: Skin-on fillets work best—the skin protects the fish and crisps up nicely.
- Don’t overcook: Salmon should be slightly pink in the centre. It continues cooking after you remove it from heat.
- Temperature: Medium-high heat is key. Too low and you won’t get a good sear.
