Spiced Lamb Kofta
Fragrant Middle Eastern lamb skewers. Packed with warm spices and incredibly juicy.

Mix the kofta. Combine lamb, grated onion, garlic, parsley, mint, cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Mix well with your hands.

Shape. Divide into 8 portions. Shape each around a skewer in a long oval shape, or form into oval patties if not using skewers.

Chill (optional). Refrigerate for 30 minutes to help them hold shape better.

Grill or pan-fry. Heat a grill or skillet over medium-high heat. Brush with oil. Cook kofta 3-4 minutes per side until nicely charred and cooked through.

Serve. Garnish with extra fresh herbs.
Traditional Accompaniments
- Tzatziki (use full-fat Greek yogurt)
- Tahini sauce
- Cucumber salad
- Grilled vegetables
- Lettuce wraps
Quick Tzatziki
- 1 cup Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 clove garlic, minced
- Lemon juice, dill, salt
Notes
- Grating the onion releases moisture that keeps kofta juicy
- Can be made ahead and refrigerated until ready to cook
- Also works in the oven at 200°C (400°F) for 15 minutes
- Ground beef or a lamb/beef mix works too
