  1. Mix the kofta. Combine lamb, grated onion, garlic, parsley, mint, cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Mix well with your hands.

  2. Shape. Divide into 8 portions. Shape each around a skewer in a long oval shape, or form into oval patties if not using skewers.

  3. Chill (optional). Refrigerate for 30 minutes to help them hold shape better.

  4. Grill or pan-fry. Heat a grill or skillet over medium-high heat. Brush with oil. Cook kofta 3-4 minutes per side until nicely charred and cooked through.

  5. Serve. Garnish with extra fresh herbs.

Traditional Accompaniments

  • Tzatziki (use full-fat Greek yogurt)
  • Tahini sauce
  • Cucumber salad
  • Grilled vegetables
  • Lettuce wraps

Quick Tzatziki

  • 1 cup Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • Lemon juice, dill, salt

Notes

  • Grating the onion releases moisture that keeps kofta juicy
  • Can be made ahead and refrigerated until ready to cook
  • Also works in the oven at 200°C (400°F) for 15 minutes
  • Ground beef or a lamb/beef mix works too
